How we can monitor the custom select field change event on new ticket and ticket details page. As per the documentation change events only available for the default select fields only.

The change events in the frontend is not available for the custom fields.
I will take it as a feedback to pass it to the Freshdesk product team to incorporate custom fields change event.
You may have to find any alternatives as it may take sometime to validate the feedback and add it to the product roadmap.
